Corn oil is extracted from the germ of the corn. This can be done by cold or hot pressing, or by the use of solvents (chemical extraction). Cold-pressed maize oil contains 59% polyunsaturated fatty acids and 24% monounsaturated fatty acids. Only 13% are saturated fatty acids. Unrefined maize oil keeps well, due to the anti-oxidant effect of a high proportion of vitamin E. Healthwise, corn oil is free of cholesterol.
